    Herder chef knife

I haven't posted a lot in this forum. So I thought it was about time I started. I'm a chef who like a lot of other chefs enjoy knives and sharpening. I've picked up a couple of vintage knives this summer so I thought I would show off a little. Here is a 26 cm herder

    I can't get really sharp

You are not setting the bevel properly. I can cut arm hair straight off my most coarse stone. and if the bevel isn't set then you're just polishing a dull edge. Edit. I only read the first couple of post. Apologies if my answers all ready has been written. didn't realise how long the post was.

    Jnat Care?

Nice answer Asteger. Very informative post. The problem with getting oil on some stones isn't that it affects the slurry fases. but it is that water tends to bead on the stone if oil has been used. So it affects the feedback and how the stone behaves during water only sharpening.

    Jnat Care?

And about the oil. Oil is fine on some stones not on others. I only use oil on non porous stones. It would be super annoying to get it on a stone that soaks up water. Synthetic or natural. If there's any small cracks or holes in your stone a bit of slurry from the lapping proces could get embedded in them. And that would ruin your day if you during the finishing stages accidentally...

HOW TO BEST USE STROPS ?

For knives I use a homemade leather strop glued to a ceramic tile. It's around 3×10. But I never really used anything else. I made it years ago and it just worked. Haven't had a good reason to change it yet.
