    Thanks for the input! My plan for the knife is to have it "fixed" into something that I can use to trim boneless cuts of meats like PSMOs or pork loins. I do a fair amount of that at work with the **** house knives so having something that actually holds an edge would be pretty nice. Ideally...

    Drop them off. A lot of places are in dire need of bodies just so the sous doesn't have to work 60+ hours. It's hard to find good help but meh help is better than no help.
