How the wedging on hard stuff like carrots? My takeda nakiri wedge like crazy and I don't use it anymore on carrot. Would like to have a takeda that can actually cut carrots...

I would probably not use a forced patina blade too. A small error during resharpening and this thing is ruined...
I finally received my polishing cream.
Took me a good 2 hours of polishing and my finger hurt.
Its not yet perfect and it will probably need another hour, but for now that will do.

What are the advantage of sharpening both side with the same hand holding the handle instead of my current Technic of switching holding hand and sharpening both side while viewing the spine angle with the stone.
