    what are you drinking tonight?

Finally had my first Heady... https://untappd.com/user/split0101/checkin/125388660 It is the quintessential DIPA. I just wish I could have gotten more than 1 can. You guys in Vermont are a lucky bunch.

Anyone watching Season 3 of Mind of a Chef?

I am enjoying this year. Its nice to watch a show about a chef without some crazy spin or rock n' roll glamor.

That is amazing, I would have come back with a car full of growlers :)

    what are you drinking tonight?

Unicorn beer. I was only able to pick up one bottle. I'm getting tired of these "rare" beers. There are so many good craft beers nowadays that I think that its no longer necessary to have to jump through hoops for a decent brew. I'm also starting to realize that there is a ton of hype out...

Hypothetical- would you camp out for a knife

Nope, not a chance in hell. Not for a knife, not for a phone, and certainly not for a pair of sneakers....

    Guy Fieri get fried.

Even if I had to dress in a chicken suit, I'd take his car in a heart beat....

Thanks for the advice guys. I pinged Jon for an estimate, worst case I'll end up taking a crack at it myself.

Does the USPS creed still apply?

I have to agree with you on the old timers. I had a post lady that delivered mail till I think 70 (or at least looked like it) and she was forced to retire. We now have a new post lady, and well.... lets just say she is inconsistent at best.

Chipped Shun Blade, what should I do?

I have a DMT plate and I think that with a bit of elbow grease I could work it out and then go through my stone progression to thin and clean it up. I'll ping Jon to see what the cost would be. If it ends up being too expensive then I might take a crack at it and see what happens.

Chipped Shun Blade, what should I do?

So its a mystery in my house where I have a chipped & cracked blade and a bunch of people who dunno what happened to it. I have my suspects but no one wants to fess up so Im not going to push it, but my wife and in-laws will have to get used to cutting with butter knives since Im putting my kit...

Does the USPS creed still apply?

I would say almost always, except today. I have about a foot of snow on my road and I dont think that little truck has 4 wheel drive :)

    Got any Stock tips?

Yeah, it doesn't seem to hard to make. I also like his skimming technique where you keep half the pot off the burner. The part off the burner gathers all the fat which makes skimming stocks/sauces easier.

    Got any Stock tips?

When you guys say clear stock are you referring to consommé (clarified stock) or a "less" cloudy stock?

    Any use a gravy separator?

Same here with the OXO, I find it well worth it even if I have to work in batches.

    Got any Stock tips?

Check out Stella Culinary Sauces and Soups. He covers all the different stocks in video's along with complete guides that you can read for the "why". I find his site a great resource for those of us who never went to culinary school but still want all the facts and techniques behind things.

Description product: A knife roll, the "Gilabert".

Whoa, very classy. Im interested to know why velco would be better than a zipper? I know high quality zippers tend to be more expensive but for a artisanal piece like this, I think it would be worth while. Interested to know how the pricing will be on this.
