    What cutting surfaces do you use for chicken?

    Poly, small enough for the dishwasher. When I prep a chicken the edge touches the board only a couple of times. I don’t see any advantage using a board that is easy on edges but harder to sanitize.

    Or a 1302. I’ve owned both. Gave away the 1302, but sometimes wonder if that was the right choice. The size difference is not much. The height and weight are what you feel most; the difference in length is harder to notice. I like gyutos with shorter heels, so I think the 1303 fits me better...

    Wouldn't XRF for tungsten be a more reliable method to determine blue vs white? I doubt that even CATRA testing would be able to confidently determine blue/white given especially given all the variables besides alloy content. Geometry and heat treat could totally confound "objective" testing...

    They are not the same. I have a 2-man set from ~2003 and I recommended the same set to a friend around 2013.     Agreed with the first sentence :) But I also loved the now-discontinued tuna noodle casserole. An added bonus: no one else seemed to like it so it was easy to trade for! Dunno if today's MREs are any good in comparison. Haven't had one in years.
