WTS /WTT: HVB, Spåre, Herde (Sold: Radiona Breg, Migoto, Skye Eilers)

Bumping this back up and adding a Simon Herde to the mix. Open to trades or sales for all of the remaining knives (Herde, HVB, Spåre). Simon Herde 14c28n gyuto (228x51, 177g) This is from Simon's small series that he competed last fall and it's a really impressive piece IMO, the level fit and...

    Show your newest knife buy

I get this for sure and think buyer is within their rights to want a professional fix, but... if you have a coarse stone it's almost not worth the hassle, you'll spend more time taking it to your local shop or the post office than doing it yourself and really not rocket science. I received...

    Please explain me semi-stainless

Not a metallurgist either but as usual Larrin has a good explanation: https://knifesteelnerds.com/2019/01/14/which-knife-steels-have-the-best-corrosion-resistance/

    CPM-D2 Gyuto Pass-Around (Proposal)

Arrived with me today in good shape. First impressions - nice proportions, more substantial spine than the last MSicard passaround, good taper and forward balance, a liiiittle thick behind the edge but solid grind once it gets going. Just tested it dicing an onion but looking forward to some...

Pricing says including tax - does that mean non-EU buyers get VAT deducted from sticker price?

Looking for a Gyuto Recommendation (Yoshikane vs. Birch and Bevel)

You might get a little bit of discoloration on product initially with the B&B but it should calm down quickly once you get some patina on it. The finish on the one I tried seemed pretty tough - I doubt it will fade noticably from normal use for quite a few years. Both are great knives and I'd...

    Project knife recommendation

Couple things: Ironclad will be easier to work on than stainless clad, and a lot of rough/rustic knives that would make good cheap projects are ironclad shiro/aogami. Okubo nakiri is a great project knife, if you're willing to make putting a handle on part of your project email Michael at...

    Knife findings

The one I had was 52100 mono, so can't speak to W1. But the grind was surprisingly good for it being 185x44 and ~200g, robust but still a very good performer. Kind of felt like a more rustic Shihan - thin enough to be enjoyable for mirepoix, sturdy enough to handle some light bone contact. Also...

    Which would you pick

Significantly better edge retention, especially with acidic ingredients. A2 really hits a nice balance of retention, sharpenability, and low reactivity (while still taking some patina). You can but the profile is very flat, which makes it kind of "thunk" down in the back half, vs something...

    +1 to Yoshikane SKD.

    Meaning of “stone-ready bevels”

This is getting in the weeds and maybe a dumb question, but are softer stones more forgiving of minor unevenness due purely to being muddier and a thicker/more viscous layer of mud getting worked into low spots? Or is there some (very small but non-zero) level of deformation of the stone itself...

    Meaning of “stone-ready bevels”

My interpretation: you can make contact with all parts of the blade road with a flat stone. So no high or low spots, bends, warps, etc. A perfectly flat bevel would qualify and so would a convex one. Concave, compound, or uneven flat/convex grinds wouldn't.

SOLD Fellow Ode Generation 1 grinder $125

Never used a Gen1 but really like my Gen2, it was a really noticable upgrade from the Capresso I used when I first got into decent coffee. For less than an Encore this is a great deal.

    All Rectangle March?

Yes it's 52100, I've had a Markin 52100 that had even more obvious banding and have seen it in A2, 1.2519, some honyaki, etc. @eddworks can better answer if his other knives would have the same characteristic. I have tried two other Eddworks 52100s and didn't notice this banding in either of...

    Banger stainless budget knives

I've seen Kagekiyo and Tetsujin ginsan gyutos go for $300 or less on BST recently, both are Myojin ground, nice dimensions, and should be serious performers. Would also second @Knot Handcrafted and also throw in the Skye Eilers production gyuto as a nice option if you don't mind a synthetic handle.
