    Which Guyoto to buy

That makes more sense. Thanks fo Norway is part of the single market.

    Which Guyoto to buy

Exactly you only pay your VAT not VAT in the country you are buying from. Because the pound is so weak atm it is pushing up prices here in the UK. Another issue is that when the pound plummeted after the 2016 referendum a lot of EU customers took advantage and cleaned out huge amounts of...

    Which Guyoto to buy

You may need to check out whether you will have to pay VAT on your end though. https://www.avalara.com/vatlive/en/country-guides/europe/norway/norwegian-vat-rates.html The value of the pound has dropped because of BREXIT so it may work out to be cheaper. There are a couple of places in the UK...

    Which Guyoto to buy

Norway is not a member of the EU the political institution but are members of the EU single market. No import duties from other single market country.

    Sharpening HRC 65+

Thanks for the input guys! Found the info re Shapton’s advice. The Jende article seemed to fly in the face of accepted wisdom. I wondered if there was some little known magic voodoo. Any opinions on the JNS synthetic vs Nat equivalents? The JNS aoto are mixed grit but I presume the abrasives...

    Sharpening HRC 65+

I am in need of a few new stones. My old Naniwa trads are on there last legs. That was not a huge issue as I had a huge 7x24cm coti that was a £10 antique fair bargain about 15 years ago. I loved that stone. I left it out on the draining rack and while I was out it met a fateful end. Wife...

    Tips for high carbon

So you let a patina form on the ground edge at the apex? The salt water idea may have been a bit out there but what is the issue with a packet of silica gel. Not in contact with the knife and absorbs moisture. What would be the hard in having a couple in your role?

    Tips for high carbon

When you get a patina formed you have to remember that the bevel is still unprotected. Especially if you are going to store. Forgive me as I am thinking with my fingers..... Anyone tried these ideas? Working with acidic produce, then wipe down with a weak salt-water soaked cloth? Using...

Heat treatment and grind: how to tell great from good, and good from bad?

I agree with Nemo on this GHT is very broad term. No edge is perfect there always compromises to be made. Murray Carter has an interesting video on YouTube where he discusses the differences between White and Blue steel. He talks about how through experimentation he proved theat the skill...

    Fragility of kiritsuke points

Chipped off, about 5mm off the very tip. I have been holding off on the repair as it the knife still works fine for katsuramuki and my low and medium grit stone have become very thin and I am trying to preserve them until I have decided what to replace them with.

Heat treatment and grind: how to tell great from good, and good from bad?

Interesting. Any idea if inconsistencies in HT are more prominent at the tips and heels or on the belly?

Heat treatment and grind: how to tell great from good, and good from bad?

What I should have said that due to the extreme thinness of hollow grind razors is that controlling the temperature of the steel during the grinding could also play a huge role. I bet it is very difficult to do consistently.

Heat treatment and grind: how to tell great from good, and good from bad?

Not so much with knives but I used to do a lot of vintage straight razor restoration. In my experience of trying to put together a matching 7 day set for myself they just did not all shave quite the same. Some took slightly better edges, but were less flexible and not able to conform to the...

    Hello from rainy UK!

That site is dangerous... All the stuff you want, but do not know why, do not need and certainly can not afford.

Heat treatment and grind: how to tell great from good, and good from bad?

I think of grind as how the sides of blade are shaped after stamping or forging, (by grinding.) High and low spots are imperfections in the surface planes. Blades can be either symmetrical or asymmetrical. Ideally you want a knife to cut straight but asymmetrical blades have a tendency to...

Heat treatment and grind: how to tell great from good, and good from bad?

To check out grinds I get either a large carrot or parsnip and cut discs slowly using the full length of the bevel. Because the produce is hard you can literally feel the high and low spots. Then with minimal pressure you can pull the edge across the discs to assess it’s tooth.

    A few beginner questions

I prefer diamond plates and a huge marble tile I have for dressing stones. Stone fixers themselves need to be kept flat too! The Atoma 400 is a great bit of kit. I use it on all my synthetic and nats. Swapping hands for the different sides of the blade is perfectly acceptable technique! One...

    Hello from rainy UK!

Variation in fit and finish and grind. My example has particularly fine tip for example. The tweaked version of AS and the heat treatment are remarkable though, you can always tweak geometry etc.

    Hello from rainy UK!

There is not a vast selection of this quality of knife in the UK. I have had a couple of knives from Hocho Knife and with the import duty, tax on shipping and handling fee you are looking at adding 25-30% on to the price of whatever you are buying. I care full time for mother following her...

    Hello from rainy UK!

Ok you got me there! I had to buy the denka online. It took a number of returns/exchanges to get the one that was right for me. That was a month from hell, just like December 1st to Xmas when you are 8 and every day is Xmas eve. I lay in wait for the DPD driver every 3rd day.
