Father’s Day 2021 I spent the day with my dad smoking a 20-pound brisket. As per the current trend, I injected the brisket with wagyu beef tallow and also included some when I wrapped and rested. Really wonderful mouth feel and tenderness. I can’t think of a better way to spend Father’s Day :)

Wonderful! It feels fantastic in the hand. I have used it on chicken and beef in terms of protein. I have also chopped all sorts of veggies. It’s wonderful!

That sounds super tasty. The reverse Sear basically lets you slow down the process. You are right that getting that color perfectly under normal cooking temperatures is like catching a bullet. Your timing has to be perfect. With the reverse year you can very slowly get it to the temperature you...

Thank you. I appreciate it. There is actually quite a bit of technique at play. The two most critical techniques to use to achieve the even maillard reaction and even inside color you are talking about are dry brining and the reverse sear. I am linking a good description to both here: Dry...

It weighs 158 grams. The knife is beautiful, but the profile ended up not being my favorite to work with. Ben Noffsinger made a fantastic knife. It’s just a personal preference thing.
