Used 240mm Y. Ikeda Wt.2 mizu wa-gyuto (non wide bevel - was told it was mizu by trusted seller)
I believe the brand name is “Sakai Izumi”
Bought it with nice mirror polish and octo burnt Chestnut handle by Jki
Used to cook a few meals at home when first received. Lovely cutter, the mirror polish does make sticktion more apparent though.
Has some very light patina and a couple spots of light pitting due to being stored for a long time. The mirror polish does resist patination somewhat but a refinish would make it sexy again.
Paid $1050 to my door, in current condition asking $900 shipped to yours in the USA.
