SOLD Birch & Bevel Isasmedjan Apex Ultra 230 gyuto

I've got a 230 gyuto in Apex Ultra from Isasmedjan under the Birch and Bevel brand for sale. It's been used and has a good patina (which can be removed if prefered). The knife has been sharpened 3 times (1k - natural Aoto progression all 3 times) and has not been thinned.

The knife itself is very well build with great F&F but it's just a little bit to small for me. The Apex steel is fantastic, it holds a great edge for a long time and sharpening it isn't bad at all in my opinion.
