I used to work for this place called Cork and Cleaver and as a prep cook made a very tasty broccoli soup. It had big chunks of broccoli. My memory is sketchy but it started out with water, butter, and chicken base. Broccoli was steamed. To get it creamy, I used flour and water in a half gallon jug. Mixed it together and very slowly poured it in to create that thick creamy texture. I believe there was some cream in the recipe too but not sure.
Anybody have a good broccoli soup recipe that mirrors the above or just a good one period?
