Hey everyone, it's that time and I need to move some knives to make room for new ones. All of these knives have been used in a pro kitchen but are in good condition aside from a few scratches here and there. Not looking for any trades at the moment. I'm also willing to give you a deal if you buy more than one. Also, none of these knives will be coming with a saya, but will be safely packaged for shipment.
Gesshin Heiji ($290). Mystery semi stainless (probably SKD), wide bevel, 24cm heel to tip, 5cm tall. Hefty knife with good food release and edge retention. I really like this knife but I find myself using my Denka far more often.

Shibata Kashima ($240). Sg2/R2, laser, 24.5cm heel to tip, 4.7cm tall. Nimble knife with okay food release for a laser. Edge retention is great and does really well in a high volume kitchen. I would keep it but it just stays home nowadays. Has a half octagonal d shape handle made of ebony and buffalo horn.

Shun Elite sujihiki Sg2/R2 ($70). 24cm heel to tip, 3.7cm tall. Probably the best shuns made, cool handle and solid steel. There isnt much flex and it has the factory geometry but still cuts well. It's just a little too short and I'm not a big fan of hybrid handles.

Misono swedish carbon petty ($50). 13cm heel to tip, 2.7cm tall. Used it a few times and thinned it a little bit. Too short for me, but it gets a good edge and is pretty comfy.
