Hi everyone, My name is Simon. My interest in knives started 6 years ago when I bought my first japanese kitchen knife - 210mm Tojiro DP gyuto. As often happens, my curiosity extended to knife sharpening as a way to maintain my new investment. I bought the king 1k/6k combo and the rest is history.
