Hi all, pretty reluctant to sell this one, but something has come up and need the money.
223x52 "enhanced s-grind" (machined micro-grooves in the s-grind) gyuto, monosteel 52100
Food release is excellent, and cuts extremely well (and looks awesome)
Seen very light home use, never sharpened. Currently could use some sharpening but I figure I'll leave that to next owner
Luke's handle work is really amazing, definitely one of the most comfortable handles I've ever used: this is stabilized myrtle with brass hibaki style bolster

Spine thickness at handle: 2.7mm
Spine thickness middle: 2.5mm
Spine thickness ~1cm from tip: 1.1mm

You're killing me here. Their knives are a little different from some of the forum faves with all the CNC milling, but they make some of the best performing knives I've ever tried. I was itching for a larger custom from them for a couple years while they built their new shop and it was well worth the wait.
