Sold most of my knives when I left the kitchen but I have a few catering projects this summer and need something cheap and stainless.
Do y'all remember those old Sakai yusuke that blue way Japan used to sell? Basically that. Something (semi)stainless, 225 - 250mm, wa handled, thin, and preferably under 200, but there's some leeway depending on what's available.
