This was on my bucket list. I bought it from CKTG and it came with a heart-shaped chestnut handle. The fit and finish blew me away when I got it. All corners are rounded and polished. It’s significantly oversized for a 210 Gyuto. Used roughly 5 times and still has the factory edge.

Bought from Kitchintools, also a Japanese knife that was on my bucket list. This particular knife comes with what is probably my favourite Rosewood+Horn combination. The thought of stealing this handle for myself has crossed my mind many times, but I will let the new owner enjoy this.

I commissioned this knife as a present for a family member. Unfortunately I made a mistake and didn’t consider the person’s age properly. So it ended up being too heavy for the intended person. It has been used about 5-10 times.
The blade is made from SF100 (HRC 61) which is very similar to AEB-L. The shape is somewhere between a Gyuto and Santoku. Bevels are convexed. Both spine and choil are rounded and polished. The knife has been hand sanded to a 600 grit satin finish. Handle is made from Blackwood and has a Birch spacer. Balance point is precisely at the heel. I really hope this finds a home. Michael’s craftsmanship is incredibly clean!
