Hey everyone- it's been a bit. We have been busy curating some special knives and want to bring them to our attention. About a year ago we commissioned some knives from Yoshikazu Tanaka, and had them sharpened by Master Shuji Yamaguchi. The recently arrived and are moving quickly- find your Yoshikazu Tanaka Blue #1 Damascus 240mm Gyuto - and don't forget to apply your KKF15 discount.

We are happy to welcome Boris Hernandez to our team! Boris has worked with Zach Peters, our sharpener in the past, and they have a good dynamic. Zach has been teaching him to sharpen, and he is getting a lot of practice on belts sharpening every single Dao Vua knife before it leaves the shop. He is consistently hitting about 100 - 120 on the BESS. To be clear- our Zach Peters Sharpening Service is, and will always be Zach, and done by hand on stones. We use belts mostly for local sharpening of lower HRC knives.

If you haven't seen them yet- check out our solid horn wa handles. Each is unique, and adds class to any blade. They are also quite durable as nice to use as they are to look at.

Some of those Carters have me *sweating*. Haven't seen stuff like that in years.
 
Will there be a restock on the Shindo Nakiri any time soon?
We get a monthly shipment, but don't know what we get until just before they ship. My estimate on Nakiri's would be 1 - 3 months. If you sign up for notifications on the product page, it's the fastest way to get notified when they arrive! We always have Shindo-sans knives on order!

Sounds good thank you. Trying to hold out for a Shindo Nakiri before impulsively buying something else haha
 
I hear you, I really like his nakiri, and am having a hard time keeping my hands out of the cookie jar.
Waiting for the day he drops another 11" funy, so I can finally stop regretting not stealing TK's when I had the chance.
