The gyuto profile was a special request, a lot of things about this project were above the norm. It was fun to work on but projects like this only come around rarely.

Well ...I watched goofy Bourdain get a "Kramer meteor" knife. Then somehow got on that thread. And to be quite honest there's not been a lot of discussion about how "meteor steel" cuts, reacts and behaves. So I got out the defribillator.

Nvrmind. I used my google-fu. Seems meteor is "pretty". And that's about it. I do wonder if the Nickel mixed with iron makes it semi stainless..
