After years of using handmade Japanese knives I still struggle to get a grip on why some perform much better or worse than others.
Just when I think I have some general rule figured out, some common denominator, a knife or two comes along that completely defies it.
My preferences also seem to get less specific as time goes by as well, contrary to what most other people apparently experience.
I passed over a Masakage Zero for a considerably more expensive TF Denka (still my most expensive knife ). The Saji blade was glorious to behold but felt heavy and dead in my hands. The Denka was fugly with grind marks, misaligned pins but oh boy does it cut and feel alive in my hands.
 
My name is on the list for a custom knife and I’m able to order late next year.
I’m still unable to stop buying. Help.
Wish I could. I wrote that comment a few years ago and my collection has easily gone 5x in size and 10x in cost/value hahaha. Clearly my methods didn’t work.

I bought a JNS Munetoshi to compare to my beloved one from RSK since they were claimed to be different. Flatter profile on JNS version but otherwise the same damn knife. Still kinda considering hanging on to the second one since Munetoshi is getting long in the tooth. Makes me feel like a dirty collector though.

How different are the profiles? NM it looks kind of significant actually.
 
I wish I could. This is what happens when hobbies/interests suddenly cross paths. I bought it tongue in cheek as a joke to show my kids. But now I have a knife I can’t use because I don’t know how that etch will hold up.
Wait thats not a photoshop???? Miyabi does like a etching service like if you want to put your name on the knife?

My og is the heavier chestnut handle. Slightly taller too, grind is roughly equivalent when it was insinuated the new one is thinner than other vendor's.

Whelp. Thanks for sharing all that. Looking at some pictures on the web I thought the difference looked a bit bigger, but that’s pretty underwhelming.

I know what the word future means i think and that's it. But i don't think my understanding of the word future is the same as this lady's here.

LOL. I'm mostly kidding around. I think it's funny because I'm now becoming that old person (not even that old) who is saying waht is wrong with kids these days? I don't even understand what they are saying....
