I passed over a Masakage Zero for a considerably more expensive TF Denka (still my most expensive knife ). The Saji blade was glorious to behold but felt heavy and dead in my hands. The Denka was fugly with grind marks, misaligned pins but oh boy does it cut and feel alive in my hands.After years of using handmade Japanese knives I still struggle to get a grip on why some perform much better or worse than others.
Just when I think I have some general rule figured out, some common denominator, a knife or two comes along that completely defies it.
My preferences also seem to get less specific as time goes by as well, contrary to what most other people apparently experience.
