Review 2023.
It was an instructive year with many new experiences and of course insights. It’s clear that setbacks are part of it. But I think it's been a very successful year so far and I hope that the next one will be even better. Part of growing is taking new paths and testing boundaries. That's how I see it. Of course, things don't always go smoothly and you sometimes suffer setbacks, but you grow from them. In any case, I have all sorts of plans for the coming year. I have something great planned for the ARM and I will also be hosting a PA elsewhere. Some customs are made and some are freely available. So, I'm looking forward positively 😉

So, here are the "pics of the year" (all unedited, I'm working on my photography skills)

Part one of my redneck lapping machine project
PXL_20240104_071750508.jpg

Why? Because thinning and flattening the bevel by hand on stones or plates is very time consuming so I looked around and maybe find a solution for that. More of it later when it's done. Part two is on the way ...

Started a new batch today too. Unfortunately there is no cleaver included 😕 but a Nakiri ☺️
2*240mm Gyuto's, 1 220mm Gyuto, 1 Nakiri, 1 petty, 1 funayuki/petty-hybrid

Wanna make them ready for HT the next days 🤞

Fabian ✌️

Okay okay....this is honestly a redneck machine 😄 but(!) It works! Okay, I didn't thinned something yet but it runs straight and smooth and the disc is very stable. No delay in any direction or so...
I've sharpened one of my edc's on the 2500 disc quick and easy 👌
The disc's are available from 80-2500 grit!
I really like it and I'm curious how it'll run when I'll do some thinning.

Fabian ✌️

Maybe interesting for @Blank Blades. or @KasumiJLA ? 🤷‍♂️

(pssst....it's a simple pottery machine 🤫)

The knafs are still at the HT service so I have time for a cool, non kitchen related, custom order. An EDC out of twisted Balbach carbon Damast. I've heat treated it, should be around 63HRC, and sanded up to 1500 grit. I'll do the final polish when everything fits together nice and flush. It'll get a stabilized bog oak handle and spacer and a stainless guard and spacer. Guard is roughly shaped. The fitting is amazing 😍

That is wicked cool

Because I have to wait for everything at the moment (handle material and blades from HT) I tried to get more practice with my lapping machine.

I sacrificed some of our old blades, laying around for years without using, because they're crap. But excellent for testing and thinning.

First one is carvingknife. Way to thick overall.
I've used the 240&2500 grit disc (2500 makes no sense but....yeah, makes no sense 😄) and a bit of handwork. Came out really nice and thin.

I also worked on a paring knife. We use it for cutting apples and stuff like that for the kiddos. Also, way to thick. This steel is so soft, I didn't thinned down to zero. Makes no sense. Also a bit t of handwork and some scotch Brite. Looks really good imho.

I've used the 150&500 discs for the first time. The 150 is pretty aggressive. This steel was not a big challenge. Took me 30 minutes to thin that out completely. Pretty cool 👌

I've finished this custom today. Was a funny project. Longe time gone since I made a knife like that. At next I have 6 kitchen tools to make and I'm pretty excited 😊

Dialing in the geometry. After belt grinder and lapping machine, I do the pre finish on stones nearly down to zero. The last step is handsanding down to zero.
It is slightly asymmetric. The outside is more convex than the inside.
You can't really see that on the picture 😄

Hey guys ✌️

I've made a leather pouch for our travel pack. Because everytime we rent an apartment, we have the problem that there is either nothing to cut with or dull sh** that you can't cut with 😑

So I decided to make something...a simple leather pouch with all the things we need. Nothing too fancy.

Because I wait (again!) for handle material for another knife I decided to start earlier with a custom ordered 52100 Santoku.
Made good progress today id say 👌
Here are some pics of the process how I do it.
1.Breaking the 45's and grind the bevel on both sides
PXL_20240304_082050763.PORTRAIT.ORIGINAL.jpg

2. Taper both sides to the center line (about 1mm thick)
PXL_20240304_083224589.PORTRAIT.ORIGINAL.jpg

3. Grind the bevels again and get off the deep 36 grit scratches (almost)
PXL_20240304_091406511.PORTRAIT.ORIGINAL.jpg

4. Heat treatment (850°C austenitizing, holding for 15min, 150°C annealing) should be around 61-62HRC
PXL_20240304_103612498.PORTRAIT.ORIGINAL.jpg

I also grind the full geometry in. Convex to zero. Tomorrow I'll blend everything in and make the final shape and so on. And maybe starting with the handle.... maybe 😄

Fabian ✌️

I'm almost done with the Santoku.
It just needs my makers mark and a sharp edge and then it's ready to go.
I'm happy that everything went smoothly and without incident. I made quick progress and I'm very happy with the result. That's how it can always work 😄
