Came in just in time before I head to work. Hitohira Kikuchiyo x Izo Ginsan 240mm Gyuto with Yakusugi Cedar handle. I’ve been on a roll with Silver 3 (Ginsan) steel knives as of lately. Couple more to chase but finally I knocked this out of my knife list. On the other note this knife looks very similar to the Kagekiyo Ginsan which I always use for work. Is it safe to say that Izo=Myojin? 🤔🤷🏻‍♂️😊👍🏼🔪

I ordered my groomsmen Kyohei Shindo nakiris as a gift, in order to spread the rugged Tosa gospel, and Dustin threw in this little guy.

High carbon Higo, 73mm blade. Fun little mess around pocket knife

Nice. I carry my Higo every day. Thinned to a zero and polished on jnats (a while ago been used a bunch since then), because why not.

If you like higo's, I encourage you to check out the French Douk Douk (pronounced as in look look). They are super simple but excellent knives that vastly exceed they're initial impression. I find them a much better option to higo's. :)
 
Have wanted to try a Mazaki for a while, I do recall a bit of a hype train around him a couple of years back so was curious to see what the fuss was all about. I know he went through several iterations of profile and shape, but this one really appealed to me.

Love the distal taper, really demonstrates that choil shots don't tell the full story when knives are that chunky out of the handle.

On the days i got the knives i spent like 30 minutes just looking at them, and the honyaki's are my favourites.
Partially regret not just going for it to begin with. Maybe next drop you guys do I’ll snag one, or if you guys release a nakiri I won’t be able to control myself lol.

Or if someone buys my BST I’ll treat myself 😂
 
Just got this cutie from Knives by Lars, a 170mm gyuto in 80CrV2. Coolest packaging that I've gotten a knife in so far, but also very protective with the wood crate, cardboard sheath and additional pieces of cardboard wedged in to keep it from moving.

170mm heel to tip, 43mm high x 3.4mm thick at the heel, 2.8mm in the middle, 0.8mm 1cm from tip, 131g. Nice, simple, comfortable cherry handle.
Great F&F, polished spine and nicely rounded, almost faceted choil. Love the taper and the profile. Workhorse grind, convex from heel to a fine tip. It's got kind of a pettyuto thing going on, I could probably use this for 90% of my cutting.
