The Three Hardest Knives I Own

I'm loving the HAP-40 and ZDP-189 knives. Man, can they hold a sharp edge.

210mm (8.2 Inch) Fu-Rin-Ka-Zan HAP-40 Series Wa-Gyuto Knife (HRC:68)
270mm (10.6 Inch) Fu-Rin-Ka-Zan HAP-40 Series Wa Gyuto Knife (HRC:68)
270mm (10.6 Inch) Fu-Rin-Ka-Zan ZDP-189 Wa Series Kiritsuke Knife (HRC:65)
 
I also love my HAP40 knives - a Santoku and a Nakiri. They keep a very, very sharp edge really, really long. And to my big (positive) surprise there is no patina yet, as I have (a nice one by the way: bluegrey) on my Aogami 2 Petty. Just great.
