A A Akaitori Jul 24, 2023 I also love my HAP40 knives - a Santoku and a Nakiri. They keep a very, very sharp edge really, really long. And to my big (positive) surprise there is no patina yet, as I have (a nice one by the way: bluegrey) on my Aogami 2 Petty. Just great.
