This is a very good knife. Can take a sharp edge and holds it well... HRC rating is 65. Good edge retention and has slight convexity.

I enjoy using my Ashi Ginga 180mm... Now I'm looking for a 240mm but with better edge retention. My top choice is actually Takada Hamono Suiboku b1 but its impossible to get one as its always out of stock. Can you recommend alternatives?

I just got a reply from CKC... hitohira tanaka white 1 is 64 while hitohira tanaka blue 1 is 64 - 65....

I was browsing around 2am and when it showed up on my instagram feed... I knew I had to get it coz pretty soon it will be out of stock as is the case with the Hitohira Togashi white 1 kasumi...
