    平常一品 有次 The "Heijou ippin" brand by Kyoto Aritsugu, which roughly translates as "(an) item of norm" or something. They are meant to be affordable knives for home use (but actually more expensive than Globals I guess) The core steel is undisclosed.

    Hmm... I would ask the seller about the logo just below the "Tosa" kanji, and the company, and registration number of the trademark, if it is registered. Maybe it's not really important, though.

    "登録" (registered) in Pre-WW2 right-to-left style. It could be just a "style" on a post-war product, though. I can't really read the 4th kanji but suppose it's "正" and it's the last one, "天平常正" but I couldn't find any matching trademark with that...

    You mean Ohzaki Touken? Probably another OEM thing? At least for a few samples it is Yaxell, company name on the box and I have never seen a box with Ohzaki name, though I haven't seen inside the box. (If it is just about packaging and logistics there can be regional differences maybe?)...

    Ugh. That's a Seki Tsubazou one by Yaxell. Just another sub-standard cheapo. I know you can't expect much for a 10-dollar knife but I'd rather have Tramontina or even Ikea knives.

    Slice on the tip, chop on the heel, and scale/strike on the backside - that's the basic I guess? So you don't use sharpest edges on rough work. Also, double-bevel modification on the heel is not too rare in some big fish market.
