I want to start baking more. cakes, bread, etc. I don't have or really want a stand mixer.

They aren't as physically robust as they once were. They are still perfectly adequate for most home users but for someone who bakes bread on a weekly basis they probably won't hold up, especially with denser doughs. For the most part older Hobarts and Hobart era KitchenAids are still entirley...

I want to start baking more. cakes, bread, etc. I don't have or really want a stand mixer.

Hobart sold the KitchenAid divison almost forty years ago. Prior to the mid-1980s KitchenAids were basically the smaller, consumer version of the Hobart commercial mixers but those days are long gone.

Current Top 5 and Top 10 Gyutos

I've been off KKF for the past six months or so due to other things going on in my life but I can quickly respond to this thread without giving it too much time or thought. Favorite knives - no order because I don't find ranking these useful although the Devins are maybe the best all around...

    Magnacut used in kitchen knives?

You missed the obvious answer: Devin Thomas

i know it may be a dumb question but how do you clean your big butcher blocks and big cutting boards that don't fit in the sink ?

Despite the aesthetic and environmental arguments for wood boards my end grain board mostly sits unused these days - too heavy and too thick (bad ergonomics/bio-mechanics for a not tall person). When I was using it regularly I just used a kitchen sponge that was barely damp and had a very...

    Unpopular opinions

Cadmium and lead be damned I'm not giving up dark (70%+) chocolate. There really isn't enough mileage left in the meat machine to worry too much about dietary vices. I will, however, try to refrain from huffing cadmium laced fumes.

Do harder steels release lower metal fragments in food than softer steel blades?

Since we're far off topic and already deep in the weeds here I'll note that there actually is a real concern about copper in pet food. The AAFCO and the FDA do an absolutely terrible job of regulating pet food in the USA. I have no idea if the EU is better or not. Copper in dog food I'm not...

WTT KKF massdrop Kamon, KKF massdrop Dalman honyaki, Tanaka x Yohei, and Maboroshi

It always annoys me when people put up incomplete sale and trade posts but exigent circumstances force me to be the jerk today. Kamon 1.2519 monosteel 231 mm x 53 mm, 207 g The spine is 6.1 mm at the ferrule and 4.4 mm at the heel with continuing distal taper to a thin tip. This knife is...

    Apex Ultra Isasmedjan Passaround

Don't forget that the Practical Sharpening stones are yet another option. I only have the BBB but @Hassanbensober likes his Practical stones and is a more discerning judge than I.

Majime lost my business for life

The sad thing about patents is that not infrequently the company with deeper pockets can bleed the smaller guy to death in litigation even if the smaller company's patent is basically solid. Majime has some interesting knives/approaches but even prior to this fracas I was a little wary based on...

    MagnaCut passaround [LIVE]

CPM steels like MagnaCut are about five times as expensive as AEB-L (equivalent sized) and in the ballpark of three times as expensive as many common forging steels like 80CrV2 plus the maker has to spend more time and go through more belts doing the grinding. Whether it is worth it to you is...

Bought Kippington WP - Going out with a bang

Jonas is an extremely nice guy and one of the most pleasant custom makers to deal with IME but I find his grinds, a bit thicker in maybe not the right places, and profiles to be a step behind Kippington. This is not to say that his knives are less than excellent. These matters are very subjective.

Bought Kippington WP - Going out with a bang

Kippingtons are at the top tier of my list as well. I have a chevron hook grind, a WP, and a petty. I've also briefly used the laser. I find Devin Thomas to be Jules closest performance rival, very different knives but both in the functional top tier. The Tsourkan WH is a bit more of a niche...

Greetings, newbie here from Hitchin, Hertfordshire

Welcome. I used to know the former proprietor of the Half Moon pub in Hitchin but we've fallen out of touch in this century.

    Your dream knife

What is your definition of a laser? @MSicardCutlery has had a number of MagnaCut knives posted where the spine was 2.4mm thick at the ferrule and thinning from there. That is only a few tenths of a mm thicker than the Shibata Koutetsu knives. You probably could specify "extra thin" starting...

    Your dream knife

If we're talking complete fantasy knives I'd probably say a @DevinT Vanadis 8 san mai wa gyuto around 235 x 54 ~230 g. That isn't quite as never going to happen as the Kippingtons in CPM CruWear, MagnaCut, or REX121 but still seems highly unlikely. On the less of a complete fantasy level...
