    I’ll say plus one for the ZKramer, carbon version is best in my opinion but the other 2 are great for that style. If you feel like dipping your toes in Japanese knives there are some that try to come a lot closer to western knives so that people that have used German in the past feel more comfotable

    I just use an anti-slip mat made for cabinets cut to size of my board. It’s cheap and can use it for all boards.

    I use my tojiro Dp as a beater now unless I am REALY doing something I shouldn’t, the I use a super cheap Henkles. Tojiro can take a beating even more if you put like. 20 degree angle on it. with Victorinox out, I think the Tojiro is a good idea. Since it is for guests anything above a 210mm...

    I can teach him the right way but unless you have to deal with stuff like rust or a dull knife it’s just not the same

    Yeah it’s at home he is 14, should have started him sooner but I defiantly want him to know how to properly care for and sharpen a knife so I figured I would get him something that he has to work at.

    Living the the US he will have plenty of chances to use western handles...that’s why I want a Wa handle (except mine which he cat use until he learns to treat his own correctly 😊) He won’t have is many chances at those so I would like him to get used to it.
