Loving the 210mm Kei Kobayashi so much I got a 150mmpetty. The Damascus is beautiful but doesn't have the makers mark. The handle ties them both together. The handles look kind of like pakka wood but not sure, perhaps somebody knows. The urushi coating looks like it could be slippery when wet...
Not having a dedicated sharpening station. I clear a space on the kitchen bench, I've been thinking about this movable table idea for a while and finally did it. When the wheels are locked I can still rock it back and forth but it's not too bad. With heavy grinding I might have to butt it up...
Wow, that's truly a beauty and rare too. Do you plan on using it or is it purely a collection piece ? I wonder if the back is usable. It would be a real shame to remove that stamp but man it would be nice to put a blade on it 😍
Thanks. I tried before stropping but couldn't get it to bite. I was surprised that it cut after stropping. I have a couple of other strops, but that one my favourite
Iyoto finish, which is usually the pre finisher, finer than 1000, coarser than ohira suita. May not count as coarse enough finish for this test. Will try with the 1000 when I get the urge to have another go at it.

That's awesome. I've been looking at mobile prep stations to set up for a sharpening station. Just to have the convenience of being able to move it and store it more easily. My rock's still live on a cabinet in the lounge 😔
I've never sharpened owned or used a single bevel. From what I've seen, I thought the flat side was meant to stay flat. Will be interesting to see what those more experienced will say.
Hi, not sure this will help but when I sharpen the edge on a new or badly worn knife, I will usually do either 10 or 20 heel to tip strokes on one side then flip it and do the same on the other side. My theory is that it will bring the apex in evenly and not push it to one side. Not sure if I...
With time and practice you will get a better understanding. It's good to have people who can give you advice, but unless you have someone there with you to give instructions. Ultimately we must teach ourselves, in the beginning sharpening is a mystery to us, there are a lot of different ways and...
