    Knife display stand

I was fed up with my cheap and ugly magnetic knife rack so i decided to make my own. I had some Ebony off-cuts lying around and used those. It should hold 4-5 knives. The 12mm x 1mm magnets I ordered were too weak; waiting on 12mm x 6mm now.

Nice, I am actually looking into the exact same knife as next buy. 'Need' a Nakiri next to broaden my collection. I actually sold my Wat guyto to get the above Kagekiyo but still have a soft spot for his knives....first Jknife love etc. Let us know how you get on that that Nakiri! Most reviews...

    Daily Sharpening Pics

Very nice! I tried to sharpen and thin mine for the first time, only to find out it was hollow ground. Aesthetically not great but sharp and functional.

What are the most sought after gyutos now?

That list is interesting. Is there a more complete version with say, Doi, Kagekiyo, Watanabe, Masamoto, etc?

What are the most sought after gyutos now?

I'm the one who opened this can of worms which derailed the topic a bit, sorry for that. My intention was not to discuss by which margin artisan makers' knives are better than industrially made ones. I understand the principle of diminishing returns and that 'functional' value for money goes...

What are the most sought after gyutos now?

That is why I struck the comparison with Masamoto and Takayuki at a similar price point, rather than true factory knives like Global or Mac. To my understanding these are bigger forges than the smaller one-man shows but still use the same methods and steels, unlike the bigger factories.

What are the most sought after gyutos now?

They are good at appealing to a certain aesthetic which factory knives don't appeal to :) Something in-between art and a tool then. Those Dalman's certainly look cool. Of course a knife from a single artisan appeals to me more than one from a big factory as well. As a new member I was just...

What are the most sought after gyutos now?

Of course, an unfortunate choice of words on my part. Are these knives so desirable because of their limited numbers and difficulty to acquire compared to say Masamoto or a higher-end Sakai Takayuki? Or are they objectively superior products?

    Are these mostly niche/collector's makers?

Recommendations for my 1st Natural Stone

I'm not trying to dissuade you from your Japanese fascination, but why count out a stone only based on the location of its quarry? I admire the Japanese for their craftsmanship; They make top-tier stuff for the various rabbit holes I seem to have fallen down. Knives, fishing tackle...

    Stone advice

Thanks :) I'm currently using a horween shell cordovan strop (different from horsehide) but will play around with a few different leathers as well.

    Stone advice

I keep my knives in pretty good shape and don't feel the need to go much coarser than my 1000 stone. I even did this flat spot removal with my 1000, As the next stone down is the much finer bbw I thought something around the 3k would be an appropriate step in my general sharpening line-up. It...

    Stone advice

The 'bite' is an aspect I'll have to figure out and had not thought of before; I had assumed a finer stone is a finer (sharper) edge. I have 2 (white) single bevel knives knives too, so its not all double bevel work. I forgot to mention my Atoma 400 which I mainly use to flatten, but can also...
