Which one of the Tsunehisa Ginsan have you tried? I'm interested in trying out their petty. Seems quite cheap though 🤔

Bent tip repair - Wusthof / Zwilling

Successful bending back! It was only the first 2mm so not a big deal but nice to have it straightened. There is still a slight waveyness and I knock the very tip (0.3mm of that) but happy with the result. Thanks KKF for the help once again

Yeah I was worrying about messing the tempering. Thank you for confirming this!

Bent tip repair - Wusthof / Zwilling

You wouldn't heat up the tip slightly to make it more pliable?

Bent tip repair - Wusthof / Zwilling

Exactly what happened to mine today! I was coring apples, and must've use the tip too much and it slightly bent. What technique did you use to bring it back? Would heating the metal slightly with a blowtorch help?

    Help me choose a Honesuki!

That was a fun train of thoughts to follow! I got excited when you mentioned the petty. I actually know a shop not far from me that have the hitohira honesuki, so I'll be able to see it first hand. I dont seem to see any of the discount you mentioned, on either Bernal or coutelier

    Help me choose a Honesuki!

Little aside, I saw a couple of people mentioning the discount code for Tokushu. Can anyone comment on the quality of their home brand? Was looking at this which seem pretty cheap, but don't really trust it. https://tokushuknife.com/products/honesuki-tokushu-sld

    Help me choose a Honesuki!

Thank you all for your great input! I will reconsider the use of a Honesuki after reading all of that. Maybe my best bet is to get a Kanehide and a nice petty. Although I don't know how I feel about getting a single bevel. Any petty people will recommend for 200usd max?

    Help me choose a Honesuki!

I am looking after a honesuki to add to my collection. I am not going to use it for the traditional poultry so much, but more after a versatile knife to prep whole fish and do some whole animal butchery. I will still be using for poultry from time to time, just not the main focus. I saw a few...

    WTB Yoshikane Gyuto

I'm a big fan of Yoshikane. After owning a bunka and doing some extended research into it, I would like to purchase some more. I am based in NZ, looking for a 240 gyuto, preferably nashiji but also open to other style and size at the right price. Definitely more drawn towards SKD. I will also be...

    Yoshikane Shirogami 2 Nashiji Gyuto

You're not too bothered by the flat profile?

    Yoshikane Shirogami 2 Nashiji Gyuto

Is it really a problem to use it as such? Does it really feel like a hard stop? Most people seem to be okay with it. I really like my bunka and thinking to go for a 240 gyuto also.

    Hi from New Zealand

Currently got 1 SKD bunka (latest acquisition) , 1 Masakage suhijiki 300 (probably 280 by now) and a bunch of other lesser one which I've trash with poor sharpening and years of cheffing. Currently looking at getting a new gyuto and petty.
