hello, looking for a new cutting board for my sg2 and vg10 knives. The choices are narrowed down to a Hasegawa FSR, Hasegawa FSB, and a Hinoki board. (also looking at a Tenryo hi-soft board from mtckitchen).
Which one of these would you recommend? The most important thing is obviously edge...
So, I talked to Jon, the owner of Japanese Knife Imports in california, and he told me that ceramic honing rods aren't good for your knife. I forget exactly why but he was pretty passionate about it and went into specifics that went over my head.
So my question is, what's the best way to touch...
Ok so I have some japanese knives (SG2 and VG10 steel), and some german knives. I was told for the german knives all I need is a 1K grit whetstone which I have (Shapton pro). That's all I have.... with my recent aquisitions of japaense knives i found out that people like to get some higher grit...
