First up, consolidating a previous bst thread, a Kawamura saku 210 Ktip gyuto in blue 2 with stainless cladding. This is from L’Emouler in Montreal and branded under their house name. Used in home kitchen, sharpened a couple times. Edge length 212mm, comes in original box

Sharpened on naniwa pro 1k/3k twice. Really liked the feel of this knife but have far too many 240’s and I don’t enjoy all the heel height.

I am sorry if this is glaringly obvious for some, but for the Pie cutlery honyaki, does honyaki mean that this knife is differentially heat treated, or does it just denote that this knife is made from one piece of steel?

It is differentially heat treated, there is a faint hamon near the spine
