Left side shinogi more distinct that right side. Wide bevel bench stone sharpened to near zero edge, low spots remain, then fingerstone. Extremely abradable steel, quite similar to otsuka heat treat, tied in aggression, less coarse that otsuka and harder, but on the softer side of Japanese steel. Superlative edge feel in food, reminds me of my 270mm denka or otsuka, or Tanaka white 2 but bitier, bites into potatoes with some of the least effort. Resembles white steel though. Requires a very brief strop to catch onto hair. Could not remove handle, but removed rust. Low spots right side behind tip, left side near heel and some small spots on blade road, one somewhat near edge. Weird knife grind . . . Righty bias at heel, lefty bias at tip. Leans more toward food separation but no problem at all with a slightly dehydrated potato, since it's a very close to zero grind with a micro bevel. Previous owner filed down handle. Pitting throughout blade. Diagonal grind marks from maker.
