1) Hashimoto Shoichi gyuto 240
Damascus over damascus, core of White #1 and Blue #1.
It has been used and sharpened but it is in fantastic shape. I removed the handle hoping to start polishing it on stones (I don't like etched blades), but never did.
The factory finish (the etching) has been removed when cleaning off the patina.

Is the edge length exactly 240?
