I’ve got a Yokishane 210 Gyoto for sale - I posted it here yesterday. It’s SKD semi stainless. Perfect knife for the line. Don’t have to worry about getting it wet or cutting tomatoes or citrus. Very sturdy and durable but also thin at the tip for finessing shallots, etc.
