Catch and release. Recently picked up from Elliot on bst here. TF steel plus work from 40 was too much too resist. Wonderful cutter, comfortable handle, TF’s AS heat treatment…. It’s falling right in between my Yanick and my 300g Isamitsu and 1 knife replacing two feels wrong
, so somebody please buy this before my lust turns to love. Have only cut a couple onions and sweet potatoes to test against the current line up.
Custom handle from Cody Paul fits the knife well and the balance is right about the first kanji closest to the handle.
There is a small deflection in the edge that is visible in the right light. I tried to capture it in the pictures, but no effect to cutting performance, and will continue a clean slice of paper towel through that spot. I gave it a light touch up on a coticule to make sure the edge was stable and it will probably sharpen out the next time it goes to the stones. Just wanted to call it out because it’s hard to see in the pics.
