#2 for this week, a 235mm gyuto. Ground almost identically to the last this blade is flatter than typical and is a very keen slicer. The overall profile is also much flatter for one of my gyuto than typical, so much so I've even considered whether this blade may be more appropriately considered a santoku, but to my mind the width to length ratio is too low. For some time I've been trying to convince myself to make a workhorse with nearer to extreme geometry, and I think this is it.
- Blade: 234mmx51mm O1 tool steel (62-63hrc) 320 grit hand finish
- Neck: 13mmx19mm
- Handle: 127mm, tapering from 26.3mmx24.2mm to 22.8mmx18.9mm, scorched oak, oiled and waxed
- POB: 53mm from handle
- Spine: 6.05mm at the neck, 3.38mm at halfway, .94mm 1cm from the tip
- Grind: flat to convex RH bias
- Weight: 220 grams
- Relieved choil and spine
- Edge: 0 prior to sharpening
