Kind of a weird sale but passing on an amazing deal that I got from a wonderful seller. This guy is the sharpest knife I’ve owned. The hollow grind ghosts through dense veg and actually offers some food release. Since the grind is so thin/concave and is unlikely to need thinning for its entire lifetime, I softened the shoulders of the wide bevel to reduce cracking in taller root veg. I also polished the knife up and put on my own kasumi to highlight the Damascus. Interestingly the kasumi on this iron cladding has kind of a creamy/fuzzy feeling. It’s one of the rare Sakai offerings with some distal taper. I’m offering this with either the rosewood handle it came with (which brings balance back into the neck) or the ho wood handle I added onto it (which brings balance toward the pinch) with different prices. I’m honestly half-minded about selling because I love how it looks, but I have a habit of defaulting to rock chopping when I’m lazy/tired which this knife does not love (though I’ve never had issues with chipping). Sharpened 2x on BBW.
