Impressive 240mm Shirogami #2 gyuto from Mazaki for sale. Recently got this knife as a gift but will be needing to part ways with it for financial reasons.
I've used it a couple of times and did a light sharpening session just to experience Mazaki's work with shirogami. Needless to say, this is by far the smoothest cutter I've used after just a few passes on a gesshin 6k. I was kinda shocked at how easily this sharpens up, but hey that's shirogami for ya. A little bit of personality due to the reactivity of the knife, but this was pretty lightly used, so not much of a patina yet. Saddening to part with this knife but what can you do in this economy.
This is from Mazaki's most recent 2024 batch of knives which seem to address the issues people had before. Maybe Mazaki just decided to stop experimenting around as much, but I think he really nailed down a good profile. Nice flat spot at the back of the knife that has a good belly to the tip for rock chopping. Really thin behind the edge but with the famous Sanjo taper giving excellent sturdiness at the heel with some laser action towards the tip. Very much recommend this one for someone who wants to get a taste of a Sanjo knife. One of the biggest improvements has got to be the handle. Really nice stabilized wood handle that looks so much better than his older releases.

Very pretty knife with a solid profile. No real complaints about it
