Finally, and possibly one of the very first of its kind; a left hand ground gyuto in Apex Ultra. Very thin behind the edge, convex ground, and a very aggressive taper in the last 1/3 of the blade. This knife should be a real all-round performer.

- Blade: 245mmx50mm Apex Ultra/15n20 san-mai ~67 HRC, 1200 grit finish
- Neck: 18mmx20mm
- Handle: 127mm, tapering from 24.8mmx22.7mm to 22.3mmx19.3mm, burned oak, oil finished and waxed
- POB: 55mm from handle
- Spine: 4.0mm at the handle, 3.64mm above the heel, 2.54mm at 13.5cm, .54mm 1cm from the tip
- Grind: flat to convex LH bias
- Weight: 179 grams
- Relieved choil and spine
- Edge: 0-.1mm
