Here is a gyuto I have available for sale.
It is forged out of 125SC, quenched in rapid oil for a hardness which should be around 63-64 HRC.
The blade is 245x58mm for 230mm cutting edge. It is 2.3mm thick at spine above the heel. Geometry is flat with low bevels.
Handle is rokkaku hanmaru shaped, made out of thuya burl with a bog oak bolster.
Weight is 191 gramms.
Asking 510 € + shipping at cost.
