Aristugu Kyoto gyuto info

Hi,

Trying to get more info on this knife. I know it's from Aristugu Kyoto, but I can't find anything on the third kanji character. I think it's "above" but I'm not sure exactly what that means, if anything, in relation to the steel, maker etc. If I'm even right about what the character is...

I think you're correct that the third character is 上 (Jō), but I don't know what that means beyond guessing something like "superior" or "special"
