I know I’m not around so much these days. Knives are on the back burner, so to speak and for myself only. I’m now settled to see a couple more go – and bring the array down to four “better” knives. Yeah... I know, but if you want my POV, that’s more than enough to make sense especially since I have twice as much cheaper utilitarians that do get a fair amount of all preps, and I’m really out of fancies about it all.
Sakai Kikumori Asagiri – 225mm SS Clad Shirogami #2 K-Tip Gyuto
Y. Tanaka blade with a properly carried convex-ish grind, wider and longer blade than traditional Tanaka/Sakai stuff, relatively heavier and cladded in stainless. Real measurements 213/52 OOTB. It weighs about 200g and has a definite forward balance. Spine is 3mm thick over the heel and aptly crowned. Quite thin BTE, more so in fact than any other Y. Tanaka I had so far, but of course I didn’t get to try one of the nice Konosuke FMs in that aspect, so let’s just call it pretty freaking good for the price.
Sharpened thrice (merely involving Cerax 1K for primary/Morihei 4K for finish) and maintained half a dozen times (light stropping on Shapton Pro 2K). It still pretty much comes up to a full 52mm wide at heel. A hair under, if you must, but I doubt it since it was almost 53mm to begin with. It’s just as good steel as my experience of sharpening other Y. Tanaka blades was – among which W#2 iron clad.
The mono Oak handle has been superficially modified to feel more grainy and have an aged aura that makes it perfect and one of my favorite mono so far. I might miss the handle more than the blade, except for the fact that I really like that blade. Hard to tell.

Pristine state, except that I could catch 1-2 faint scratches from use with indirect light. The finish blends those pretty seamlessly anyhow, but just to avoid any complaint about misrepresentation.
