Okay, let's just get it out there up front - yes, I'm bundling to try and move a knife (or two) along with something more desirable. But I think I'm pricing the whole bundle well enough to make it worth someone's while.
The bundle:
The knives with my all in prices paid (knife + taxes + shipping/duties):
Hitohira Tanaka x Yohei Blue 1 Damascus 240 gyuto ($899CAD)
Sakai Kikumori Nakagawa White 1 210 gyuto ($576CAD)
Konosuke YS 210 gyuto ($616CAD)
Total price I paid - $2091CAD
My listing price - $1500CAD + shipping/insurance including Paypal fees (around $1100USD) Canadians/GTA folks can reach out for fee-free (Interac) options as well as local pickup.
The details (pics will be in separate posts below).
Hitohira Tanaka x Yohei Blue 1 Damascus 240 gyuto
219x49, 167g.
Important point 1 - note the length. This is slightly short even for a Sakai 240. I didn't realize that until a month after I bought it and measured it. In hindsight, the pricing was a bit lower than most 240s for the line, so I should've guessed something was up.
Important point 2 - It is my opinion that this is ground left biased (you can see this on the choil shot). That said, this had a very right hand ground choil, to the point that it was sharp against the hand in a left handed pinch. I softened that using a dremel and a sanding drum, but it is still pretty right biased on the choil.
Been touched up a few times in the near year that I've had this knife. Might have had a few strokes on a 1K at one point, but mostly 3K+. There is a scratch on the left side of the knife where it had slipped against the stone in one session (best pic I can grab at the moment is below).
Very nice knife, used on and off for the year that I've had it, but just has really gelled with me like some others so it's going to move on.
Sakai Kikumori Nakagawa White 1 210 Gyuto (with saya)
198x46, 149g
All the details (including pics) for this one are over here
Kono YS 210 (with saya)
215x48, 154g
Unspecified semi-stainless
A nice example of a Kono/Yoshikane. Bought it to fill a certain role and then got my Kipp Laserpony shortly afterwards so it has been sitting. Slightly more righty biased than I remember on the last example but still very good for a lefty.
Been stropped on 1u diamond/12K twice or three times. The edge had rolled slightly in a few places so was doing minimal to touch it up and straighten it out.
