240mm Carter White Steel Core Stainless San-mai Ironwood Western Gyuto
A Beast. "Workhorse"? More like "Warhorse". A clydesdale with stainless armor. Steady and balanced, feels confident in hand. Not for the weak of arm or those easily tired by hard work. I've had a few Carters over the years and this is not your typical dainty laser-ish Carter - quite the opposite.
If I was still working as a chef, this would be THE prep destroyer of choice. Alas, those days are now but a memory, making this knife a bit "over the top" for home cooking. VERY reluctantly considering letting it go.
The previous and original owner is a high-caliber professional chef, and this knife looks like it got some serious but loving use in a pro environment. With a proper clean-up, this thing would look as good as it cuts.
Long flat spot for the back 2/3rds of the blade, with an gentle upsweep for the front 3rd and a pointy "Frenchy" tip. It is a bit thicker BTE than what people seem to prefer these days, a bit of thinning would make it really shine.
Comfortable handle without too much of the contouring that a lot of other makers put into their western handles these days (no coke-bottle). Mosaic center and brass outer pins, soldered brass bolster. Scales and bolster are tight and flush with the tang. Nice figure to the ironwood.
Well crafted leather sheath with white contrast stitch and snap button securement. Thick high quality leather with finished edges.
It has light scratches here and there from having met and destroyed many ingredients along the way, but nothing deep or serious that a solid buffing couldn't handle.
Ruler measures:
242mm edge length // 51.5mm heel height // 3mm spine @ heel
Hesitant to move this, but an opportunity has arisen.
Asking $1500 shipped in the USA. This price is firm, will keep it for anything less.
