Can anyone weigh in on which material is preferred? I have noticed that the copper variants are more expensive, do they provide something that a stainless oroshigane doesn't?
 
There are shops that can typically straighten/'sharpen' orishigane for you. I doubt that's the case with stainless but maybe it's not a need.
