Im a knife lover and home cook. Ive been lurking on this forum for a while researching a good first gyuto to get for home cooking. Seemed like the CarboNext and Suisin INOX Western were almost universally recommended as good places to start, and I was leaning towards getting a 210 mm CarboNext. Then I came across the Northwoods Blackwood XHP http://www.knivesshipfree.com/product_info.php?cPath=75_934_966&products_id=24006
Seems like an interesting knife thats similar in price to the CN and Suisin, good blade steel (although Im sure it depends on heat treat), nice blackwood handle, and American made. Only problem is I cant find any info on it from people who have used one. Does anybody here have any experience with them?
Only thing Ive found so far are these pics of a santoku http://www.knifeforums.com/forums/showtopic.php?tid/931166/pid/2544198/post/last/m/1/ Seems like it has a nicely rounded spine, but I cant tell much else about it...maybe you guys with more experience can shed some light.
