It’s been a long time since I quit cooking professionally and I still have a lot of gear that is sitting unused, so I’m going to fire sale everything for half or more off what I paid to clear out some much needed space for when the girl and her kid move in. This is basically new. I think it was used for a single banquet to slice and plate tri-tip. It’s my perfect suji. Great steel, no flex, and just a hair longer than 270. I just have no occasion to use it as someone mostly veg these days. Touched up the initial edge once on arrival on a natural stone. JoBone handle.

2019 version. It has been thinned a bunch and sharpened plenty. Was in the regular rotation professionally until I worked out that 255 is about my gyuto limit. Custom ironwood saya and handle by Evert. Saya shows signs of use doing its job protecting the blade.

This was the last “main” knife I used professionally and my search basically ended here. The coke handle bottle honestly made all of the difference between the regular model. This knife has been to hell and back, but all of the mojo is cosmetic and it has plenty of life to give. Would make an excellent beater or line knife.

The bird destroyer. IMO there aren’t many garasuki on the market because Misono seriously nailed it that well. There isn’t a more confident feeling knife you can hold in general. Built like a tank and gets as sharp as anything you own.

This one has been in my knife bag for years of regular use. Incredibly tough for rougher tasks and thinned enough for finer knife work. Very strong all rounder, especially for a working pro. There are thinning marks under the patina. Saya is Tasmanian blackwood.
