Hi fellow Knife, Stones & Cooking enthusiasts.
Greetings from Austria.

My father gifted me my first AUS-8 Santoku from Osaka 16 years ago.
From then onwards i always wanted to learn and handle a knifes better. My idea of cooking is that everything can be prepared with a knife and nothing else.
14 Years later i finally have the spare cash to dig deeper into more knifes. 2021 I purchased a 245mm Mazaki from cleancut and just recently the JNS Y.Tanaka 270 sujihiki.

What am i looking for here on kkf?
Knife pics, links for good deals and for 2022 after sharpening for 10+ years on synthetics i wanna get into natural stones.
At first just for sharpening and later for polishing.
Might as well buy from experienced sharpeners here on the forums.

  • 270mm Blue #1 Y.Tanaka Sujihiki
  • Unknown 180mm AUS-8 Santoku
  • 150mm R2 Takamura Petty
  • Unknown White #1 165mm Nakiri

  • 10k SS
  • Leather strop w Diamond paste

Some nice knives you have there.

I will warn you that natural stonez are an even deeper (and more expensive) rabbit hole than knives 😁
