Just logging in for the first time. Many thanks to all who contribute and help inform the rest of us. Being in the food & beverage industry, I am no stranger to knives, but recently, with Covid and the help of other nerd knife friends, I have wandered down the rabbit-hole that is our passion. Like cast iron, I believe a knife should be used, even though I can’t afford and would pause to break out some of the knives being mentioned here, but nonetheless, I thank everyone for their professional opinion and feedback that guide our obsession. Good friends and Good food come from Good sources.
